It would appear to be a loan-word from the English 'shim'. Incidently it seems to be much more widely used in Norwegian than in Danish.

agree Roald Toskedal : Yes, this is a rather old loan, to boot - I'd guess it 'immigrated' with sailors some 100 years ago...
