Guargummi wird vom Samen eines hülsenartigen Busches extrahiert, der Cyanopsis tetragonoloba genannt wird und in Indien, in Pakistan und in Texas kultiviert wird. Guargummi hat eine ähnliche chemische Struktur und ähnliche Eigenschaften wie Johannisbrotgummi und -xanthangummi: es kann hauptsächlich als Verdickungsmittel und Ausgleicher verwendet werden.

: Der Begriff Guargummi wird in der deutschen Lebensmittelindustrie kaum gebraucht, klingt für mich wie eine gedankenlose Übernahme aus dem Englischen, Guarkernmehl ist richtig
