@ Blanca Going by the question category, "Cooking / Culinary / Restaurant menu", I think the text is a description given on a restaurant menu rather than a recipe. Maybe the asker can shed further light on the matter....

notice that what you mention is after the tomatoes have been processed, reduced, but as a name in a recipe, it is tomato reduction.

Tomato reduction and reduced tomatoes I think "tomato reduction" is really the right expression. On the other hand:

agree Ray Ables : Yes. Although "chimichurri" is in fact a "vinaigrette" and could be translated as such. I would suggest "a tomato vinaigrette reduction," or, if balsamic vinegar is used, "a balsamic tomato reduction."

lol, no they've been reduced by cooking them! Given the context I'd have thought that was obvious, no? // or it could mean that they've been demoralised with insults and 'reduced to tears'// I don't know but it's not for chefs it's for customers!!

I would also like caramelized tomatoe, since that's what happens when you reduce it, but let's just leave it at that...

agree Carol Gullidge : or you cd maybe even get away with simply "tomato chimichurri" I found a recipe for this using sun-dried tomatoes. If you retain the "reduced", then of course you'd also need to hyphenate the first 2 words

Anything with 'reduced tomato' isn't correct, sadly; 'reduced tomato' means either tomatoes bought at a lower price or the use of a decreased quantity of them; these sauces are called 'reductions', where onions, tomatoes, whatever, are sweated down to reduce in volume;

I think Neil and Fatima's answer is better because in chimichurri the ingredients are not cooked but chopped and mixed raw. In this recipe I would think that the tomato reduction is added after preparing the chimichurri.

All the "Tomato Chimichurri Sauce" I found are made with raw chopped tomatoes added to the regular ingredients.

I the second link the tomatoes are "sun-dried" which is not the same as "reduction"
