"Return" or "back" "Back to the roots" is a more colloquial expression. I would go for that.

Spanish term (edited): parece abrirse una nueva etapa de retorno a las raíces

there seems to be a new stage of return to the traditional roots

Today, however, there seems to be a new stage of return to the roots that elevates traditional cuisine to a gourmet level.
Or...
a new stage of return to the traditional roots that elevates domestic cuisine to a gourmet level.

Or
a new stage of return to the roots that elevates traditional Peruvian/Spanish/Colombian (whichever) cuisine to a gourmet level.

Peer comment(s):

agree Dylan Porter : I would suggest that "... a new stage of returning to traditional roots..." would in my opinion best fit the phrasing.

agree Orkoyen (X) : …and with Dylan’s suggestion. Could sub “chapter” for “stage”

agree Simone Taylor : Agree to the comments above, new chapter, returning, and either no article or their traditional roots but not "the" traditional roots.
