As for your 'dobbelt centerskær,' all you have to do is change your word order slightly - it's obviously a double-edge(d) knife or blade: https://www.knivesplus.com/double-edge-knives.html But now we come to the question of centerskær and sideskær. If you were in a big hurry you might transliterate to "center edge" and "side edge," but these don't really roll off the tongue.
