As Phil notes, you've answered the question yourself. Any of the suggestions (monstrosity, eyesore, although the latter is more focused on the appearance than anything else) would work for me (except maybe cockamamie, which is a bit too American for my European tastebuds).

Explanation:
Para mí, la implicación del texto es que son las ideas culinarias-estrafalarias que son las mamarrachadas, y no las comidas, o una plato específico, en sí.
Así que voy con describir las ideas como total nonsense. Si el contexto fuese más informal, quizas total bullshit (USA) o total bollocks (UK). En este sentido Nonsense = Tontería o Disparate.

Creo que está muy claro:
"Eso sí, cada "idea" culinaria-estrafalaria que se te ocurre (verdaderas mamarrachadas)...".
Estamos hablando de un Chef que inventa "tonterías" (nonsense) con el afán de hacerse interesante.
Definitivamente, son las "ideas" locas que el locutor está criticando, y no la receta.
