The wing of a chicken has 3 joints. This recipe is at its best when you use only the middle joint. However, as you rarely come across two pounds of just this joint in the supermarket, this recipe calls for using whole wings.
...
Cut each chicken wing into its 3 individual joints. Discard the wing tips. Add the chicken wings to the batter and stir to coat the wings evenly.
...
Add the chicken wings in two batches, one batch of each of the two joints you are using.

Chicken wings consist of a tip, middle and meatier "drumette," separated by joints. Some places discard the tip and use only the separated middle and drumette pieces. Chili's serves only drumettes, which judges thought could have been meatier, but there was no doubt they were easier to eat than the middle joint.

niet-gescheiden vleugel
