La frase completa es: "...y una emisión de etileno moderada de unos 5 a 8 μL C2H4 kg-1 h-1 a 12 ºC en frutos pintones (algo inferior en frutos verdes y superior en los maduros)"

Mi traducción:
and an ethylene emission moderated at 5 to 8 μL C2H4 kg-1 h-1 at 12 ºC in fruits which change colour as they mature (which is less in unripe fruit and higher in ripe/mature fruit)

ripening fruit

DRAE
pintón, na.
(De pintar).
1. adj. Dicho de las uvas y otros frutos: Que van +++ tomando color al madurar+++.
Definiciones de ripening en la web en inglés:

* acquiring desirable qualities by being left undisturbed for some time
wordnet.princeton.edu/perl/webwn

* Ripening is a process in fruits that causes them to become more edible. In general, a +++ fruit becomes sweeter, less green, +++ and softer as it ripens. However the acidity as well as sweetness rises during ripening, but the fruit still tastes sweeter regardless. The reason for this is the Brix-Acid Ratio.

Peer comment(s):

agree John Speese : Ripening sounds good, there are charts showing the various color stages of ripening tomatoes for commercial growers, all of which have names: mature green, breaker, pink, etc.
