the intern’s school supervisory staff? I think "qui suivent le stagiaire" means that they are his or her pedagogical tutor/s. It's to reassure companies about confidentiality if they agree to take a trainee or intern.

The posting does not make it clear if this is a school which has a student/trainee teacher or other type of staff or another type of company with a trainee, so I have given a more general reply suitable for UK.

Schools have a variety of staff spending part of their training in school, with a college tutor calling it to check up on them, but there is always a member of the school staff with responsibility for the student. They make sure the student is given suitable tasks to do etc.

All depends, of course, on the context which is sadly lacking.

I suspect that the 'training estbalishment' here is not the establishment that is sending the stagiaire, but rather, the host establishment where the trainee is 'en stage'.
