I don't think there is any established translation for McDonald's in Spanish-speaking countries (but I'm not sure).
I have had numerous Shamrock Shakes in my youth! It's a mint-flavored ice cream shake. Why not 'batido de menta' which conveys exactly what it is?

8 gotas colorante verde
Preparación
Mezclar todos los ingredientes en la batidora y batir a alta velocidad hasta que esté suave. Parar la batidora para remover con una cuchara si es necesario para ayudar a que el helado se mezcle. Verter en dos copas de 12 onzas y servir con una pajita.
