sympathetically converted / sympathetic
I think "sympatheticaly converted" (regularly used to describe buildings that fit in with their surroundings) and "sympathetic to its surroundings" in the phrase below, might be a good option here.

8 mins
epitome of the sensation/ambience/environment
To me, this means it awakens your senses, due to the natural environment that surrounds the hotel.
Example sentence:
The hotel has been the epitome of the sensation that the scenery provides.
8 mins
atmosphere
I would say something like "the atmosphere pervading the countryside" (I'm sure you can do it better!)
20 mins
sense of well-being
another suggestion.
Sounds positive: well-being, comfort and harmony ...

sensitivity
sensitivity referring to the "paz y tranquilidad" mentioned afterwards and also the type of patron the hotel wants to attract.

: This is one possible translation, but your explanation is wrong - it's nothing to do with peace and tranquillity or the type of clients they want.

hi Phil, I think the clue is in "la sensibilidad que contagia el paisaje", I can only understand this as a natural force. Sensitivity means a heightened sense of feeling which operates most powerfully in conditions of "paz y tranquilidad".
