Am I correct in saying that what you are looking for is a word to describe the, for instance, "delicate beauty" of the landscape which has influenced the restoration of the building?

sympathetically converted / sympathetic

I think "sympatheticaly converted" (regularly used to describe buildings that fit in with their surroundings) and "sympathetic to its surroundings" in the phrase below, might be a good option here.

epitome of the sensation/ambience/environment

To me, this means it awakens your senses, due to the natural environment that surrounds the hotel.

Example sentence:

The hotel has been the epitome of the sensation that the scenery provides.

I would say something like "the atmosphere pervading the countryside" (I'm sure you can do it better!)

hi Phil, I think the clue is in "la sensibilidad que contagia el paisaje", I can only understand this as a natural force. Sensitivity means a heightened sense of feeling which operates most powerfully in conditions of "paz y tranquilidad".
