I don't think there's a poetic English term for this dish - my best suggestion is to make the dish description as standard and informative as possible.

Fuchsia Dunlop in her book 'Sichuan Cookery' (2001) on p. 35 has 'Man-and-wife meat slices'. The choice of 'meat' rather than 'lung' is because she adapts the recipe slightly for use outside China. She writes: 'The name fei pian literally means 'lung slices' and the dish is traditionally made with a mixture of lean beef and offal (including ox hearts, lungs and stomachs), all stewed in a delicious aromatic broth. It's equally good simply made with lean or marbled meat, as in the following recipe.' She is something of a recognised authority on Sichuan food (in UK at least), and so her English version of the name may qualify as the authoritative translation you are after.

I saw this translation on a Ipad app for Chinese menu. You might want to think about? Not sure. Just FYI. I know for sure 夫妻肺片 is beef stuff.
