suave de pil-pil y ajos.

El contexto total de "suave" es un plato de un menú de desgustación. El plato de pescado donde va ese "suave" es: Taco de bacalao atemperado sobre ajoarriero y suave de pil-pil y ajos.

Calculo que "suave" es una salsa, pero quería asegurarme porque mi lógica me dice que necesito una textura (sustantivo) para presentar la salsa de pil-pil y los ajos.

Gracias por vuestras sugerencias.

Agree Perhaps they are just being "creative" with language and using an adjective (suave) as a noun. They do it elsewhere and it can be exasperating. I'd consult the chef or author of the text if possibole.

especially given that this is a tasting menu where traditional dishes are often deconstructed, and nothing will be as it seems

Carol is right... given today's (sometimes bizarre) creativeness, it could be something other than a sauce. Contacting the client is the only way of knowing for sure.

you have no choice but to ask the client You may well be right, but, given the inventiveness of today's culinary art, it could even be type of a "foam" or "creme" or some other wonderful concoction of the chef's own devising. In my (vast!) experience of translating menus and recipes, it just isn't worth not checking this out with the Chef or Maitre D. For instance, I've been astonished at the many possible translations of the French "croustillant", which can be anything from a pie crust to a "brittle" or "crisp" or even a pretzel-type thing - so you definitely need to find out exactly what this is that you're dealing with. A guess could cause a lot of problems...

Pil pil sauce

Bacalao al Pil Pil is a traditional dish from the Basque Country (el Pais Vasco); and is well known all over Spain, and popular with Spaniards and tourists alike. Bacalao al pil pil is a tricky Spanish recipe and does require an odd sort of dance in order to make the pil pil sauce just right. However don't be put off as even the most novice chef, with a little patience, can produce an excellent example of the dish.
