El contexto total de "suave" es un plato de un menú de desgustación. El plato de pescado donde va ese "suave" es: Taco de bacalao atemperado sobre ajoarriero y suave de pil-pil y ajos.
Calculo que "suave" es una salsa, pero quería asegurarme porque mi lógica me dice que necesito una textura (sustantivo) para presentar la salsa de pil-pil y los ajos.

Bacalao al Pil Pil is a traditional dish from the Basque Country (el Pais Vasco); and is well known all over Spain, and popular with Spaniards and tourists alike. It is made with salt cod, garlic and olive oil.
