geographical indication, PGI) or quality trade
marks, has become very important in Spain in recent years.
Nonetheless, producers and retailers often lack the necessary
objective information to promote and to make good
use of the quality (i.e., nutritional and sensorial) of meat
obtained from these breeds, in order to achieve product
differentiation.
