A literal translation could work here.

French painter Charles Le Brun's theory of expression:
"All the expressions described in the text and illustrated in the sketches are defined according to the contrast with the norm "tranquillity", understood as a sort of **zero degree of expression** in which no part of the face is altered."

The way I see it, this really is just about facial expression. I understand that this is about a "face bank" or database of facial images, and the expression on each one, "cada una de las muestras", is neutral, or with a "zero degree of expression".
