I think the difference is mainly between 'trim' (sg.), which can sometimes be some kind of edging — "a lace-trimmed dress" — and 'trims' (pl), which to me suggest a more general notion of 'things that might be sued to trim (embellish, adorn, ...) a garment — and hence, 'trimmings'
