"Esofago de forma y distensibilidad conservada, se aprecia atasco alimentario con fibras organicas ... "

I have not come across this condition before, so am not sure of the correct English term. Is this "food impaction"? or what is the standard way of saying this in English?

The terms I'd expect to find for this kind of thing are "food (or alimentary) blockage/obstruction/impaction...
"A gastrointestinal (GI) obstruction is when a person’s GI tract is blocked."
Example sentence:
