At the end of the day, you should coach them out by discussing the day’s activities, answering any outstanding questions and ensuring they have a good grasp of what they learned.
They are talking about a trainer in a restaurant, who is responsible for manager in training to be shift managers. The term has nothing to do with helping an employee understand that it's in their best interest to leave voluntarily.

Yeah, I tend to agree. Speaking from personal experience in restaurant management, I can't say I've ever heard "coach out" or even "debrief"

Yes, it is a strange term and not common at all but I think these three steps are involved.
Yes, it's similar to debrief in that 1. you want to find out what the trainees have learnt by asking probing questions
2. recapitulate by summarising the points made during the day and seeking feedback or questions
3. evaluate
by seeing which trainees are worth coaching up = giving them further training
or
coaching out, encouraging them to reconsider role or change paths
That's the meaning I get from this "coachability" = are they worth coaching or not?
