This is a story by a well known writer who lived in the first half of the XIX Century.
How you translate it will depend on many factors, so isolated terms cannot be considered as such but part of a whole vision.

There is a good translation of this story into Spanish and all replies you received have been taken from there, so I suggest you refer to said version.

Se detenían los compases de los bailarines de vals / de las parejas que bailaban el vals. La acepción número 6 del Merriem Webster dice que "evolution" es una serie de movimientos establecidos y el paso del vals es en en compás de 3/4 en círculos por lo que otra opción podría ser "se detenían los giros de los bailarines de vals".
