What may seem normal to one could be abnormal to another. The student will learn quickly when they understand their own posture and makeup, as that is the best platform for comparison. Rory developed stooping posture early in his career, combined with a sway back, his figure was one even experienced Savile Row cutters struggled to cut for. Once he successfully learned to cut and make for his own complex body, he had few issues with clients of a similar body type.

I suspect your vouté-renversé should really read either vouté/renversé or vouté, renversé
The following are from https://www.furet.com/media/pdf/feuilletage/9/7/8/2/3/2/9/4/... , a book written in 1846 and republished in 2020 which appears not to searchable, even if they have a digitized text:
"Nous les définissons sous les noms d'hommes droit, voûté, renversé, élancé, trapu et gros. L'homme droit est celui qui se tient bien,"
"être droit, voûté renversé ou gres [gros], avec des épaules variant de toutes les façons"
It can be purchased from FNAC for a little over €11.
On the strength of the definitions here - https://www.cnrtl.fr/definition/renversé//1 - I'd say renversé is the opposite of hunched, i.e. where the shoulders are to the rear of the position with normal posture (if that is possible). God only knows what this might be in English, but it makes me think of the exaggerated military stance of Battery Sergeant Major Williams in the sitcom It Ain't Half Hot Mum!
