No sé como queda esto, pero definitivamente "the latter" no es lo anterior, sino todo lo contrario.
Susie and John went to Amsterdam. The latter came back as Jenny, the former never came back.
"The latter" se refiere a John, el segundo en la lista, y "the former" a Susie.
En este caso, si la frase se refiere a "Engineering Mathematics", supongo que quiere decir que el curso incluye matemáticas teóricas sin estudiar las aplicaciones en la ingeniería.

I find the English sentence a bit misleading. Do they mean it is "exclusively that of the latter", or that it excludes that of the latter? So my suggestion is a guess - hope it may help.
