El dicho/la broma significa que la única forma de encarar un proyecto/problema enorme es separarlo en pequeñas partes que individualmente sean más simples de solucionar.
No creo que la traducción literal al concepto de "comerse un elefante" genere la misma imagen en la mente de un hispanoparlante.
