viande de caractère

Non-PRO French to English Science Livestock / Animal Husbandry Beef cattle
I'm translating a sentence which describes the qualities of a certain type of beef, bred "pour la qualité de sa viande de caractère". I get the gist of what this means but I'm struggling to translate in a way that isn't incorrect or sounds awkward. I know that 'avoir du caractere' can mean that a person is stubborn or has a strong personality, but I'm unsure how this transfers to meat! Any ideas?
