As I see it, the key factor here is not really the direction of the boats in relation to the wind (per se this wouldn't be obvious from an image), but rather, the appearance of the boats — ocean-going racers look so much more impressive scudding along close-hauled, heeling, every square inch of canvas taut... this seems to me very much the spirit of this particular piece of text.
I really like Michael's suggestion of 'blue water' — though I've just noticed that the text goes on to talk about 'steely-grey sea', which makes things a bit more awkward!

upwind blue water sailing
"Près océanique" seems to be a popular phrase (lots of ghits: maybe a journalist's happy invention that was seized upon by his colleagues) but it's difficult to find a short and snappy EN equivalent.
I expect Chappy has now passed the deadline for this, but while musing over a glass of whisky and "Loisirs Nautiques", I came up with the following, which I offer up humbly as alternatives to Tony's suggestion:
- sailing close to the wind / on the ocean / far from land / on the open sea
- "blue water" upwind sailing (upwind blue water sailing?)
- sailing upwind in mid-ocean
But don't go looking for ghits for them ...

:) Thanks Tony - I'm sure there is something better out there (on the ocean ?) if we could find it ! You might add a variant to your suggestion: "sailing close to the wind out there on the ocean"
