The context is an interview with a company who provide IT software and hardware services to their clients. I know the literal meaning of "churrería" of course, but here it seems to be used in a metaphorical sense and I'm not sure exactly what it refers to.

Though 'gamut' already denotes 'whole' or 'full' or 'complete,' usage suggests they all collocate nicely here.
