Los Pasas

Spanish to English Other Cooking / Culinary Restaurant kitchen procedures
A sentence from a kitchen procedures manual, referring to the order in which the head chef shouts out the orders to the line cooks. "Los pasas" or "platos de pasa" appear to be food that is basically ready, requiring only minimal preparation or plating:

"Se cantará la comanda entera, primero los pasas, los platos que salen al momento y se cantarán separados por partidas: primero los platos del horno, luego la plancha y en último lugar los platos del cuarto frio"

This is from a restuarant in Spain. I imagine the terms may vary from kitchen to kitchen or from region to region.

I don´t see why not. It is a term widely used in the food industry.

OK... ahora lo tengo claro.
Se canta la comanda entera = order
Después los pasa = nearly no preparation, just plating. Pick-Up (dishes)
Los que necesitan preparación= Fire
Una vez que el expo (expeditor or caller) llama la orden, llama a tener listo los "pasas" (food on the pass). Cuando el momento de empezar a cocinar la carne por ejemplo, ahi solo llama al Fire esa parte de la comanda.
