Thanks for an interesting question. The answer may be more British than Italian as you will see from the information below.
Sun dried tomatoes are a staple and well known to most of us who dine or cook. They are usually made from Italian Roma type tomatoes and cut, seeded, and salted. The tomatoes are then placed in framed wooden trays raised on blocks for good air circulation. They dry in the hot sun to a fraction of their size and weight and usually end up packed in oil and jarred. Sun dried tomatoes can also be made by oven drying or in a dehydrator.
“Sun “blushed” tomatoes” seems to be a term used in Europe and especially England to denote a tomato that has been “not fully sun dried”. They may also be called semi-sun dried tomatoes and are described as similar to sun dried, but much sweeter and less chewy. They are also typically packed in oil and sold in jars. They are also added to other products such as “Sun Blushed Mayonnaise”. I have included a link to an ad for such a product below found in New York City.

They are quite common through English eateries and shops.
“Sun Kissed” and “Sun Blessed” tomatoes seem to have more to do with advertising than tomato variety. The phrase “Blessed by the sun” or “Sun blessed beef tomatoes” hint that wonderful Mr. Sunshine has slowly and delicately ripened our products to the ultimate sweetness and perfection. I have also included links below to ads for “Sun kissed tomato oil” and “Sun kissed heirloom tomatoes”.
