"Particular" is for "sobre todo". And then maybe "representing" for "plasmar" (I don't think "express" works very well here).

I really don't think you should leave out "se recrean". It does add something to the sentence, namely the idea that the way the figures are modelled indicates the frame of mind of the person who modelled them. Even if you think this is a fallacy or merely fanciful, the writer wanted to say it and we owe it to him/her not to cut it out. And "sexuales" should certainly not be left out either. The writer is saying that the female sexual characteristics are modelled in a way that suggests the artist took pleasure in modelling them. This is highly characteristic of prehistoric art, where there are many female figures with very prominent breasts and buttocks.

Nor, incidentally, should you reduce "figuraciones humanas" to "idols". First, we might assume that they're idols, but it doesn't say so, as far as I can see. And this sentence is not about all the "estatuillas" but only the majority of them that have human features.

leave it out

It doesn't add anything to the sentence, which can be expressed much more succinctly in English. Something like:

Most of these idols [we already know they're human figures] have obvious feminine characteristics, though some are male.
